Editorial

Since I have been appointed as editor of Nutrition & Food Science I have had a fascinating insight into nutrition in other countries.

Here in the UK there is the overwhelming problem of over consumption of foods andÂ’the resultant problems of obesity, which are threatening to overwhelm us and put enormous strains on the National Health Service.

In the developing countries sufficient of various nutrients is a key issue for many but there are also the emerging problems of obesity and associated disorders such as type 2 diabetes.

There are fascinating papers on different types of foods, which are not common in the UK. Yet with the vast market here in the UK for new food experiences it is amazing to see that there is a market in premium stores for such items as buffalo milk!

Often those authors who submit papers are working in less affluent conditions and it is amazing to see the high standard of papers sent, especially when they have been written in English which is often not the mother tongue of the researcher. While some authors need help to produce a satisfactory paper this help may not be more than is required for many English-speaking authors.

In these days of technology and e-mail most authors submit their papers electronically in the first instance and then send final copies by post. However I still receive the occasional paper typed on a standard typewriter, which shows credit to the diligence of the author.

Also I have had numerous packages containing discs and copies of papers–-one from India stands out as the envelope was lined with the most beautiful piece of green patterned silk material which had been used to give strength to the paper envelope which is a far cry from the usual e-mails!
